Bò Né Trứng

ò Né Trứng is a beloved Vietnamese breakfast dish that brings together sizzling beef steak, fried eggs, and a medley of fresh accompaniments.

Served hot on a cast-iron plate, this dish combines the juicy tenderness of marinated steak with the rich flavors of sunny-side-up eggs, all complemented by crusty French bread for dipping. Perfect for starting your day with a hearty, flavorful meal!

Recipe:

Ingredients:

For the Steak Marinade:

  • 2 thinly sliced beef steaks (sirloin or ribeye)
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp black pepper

For the Dish:

  • 2 eggs
  • 1/2 onion, thinly sliced
  • 1 tomato, sliced into wedges
  • 1 tbsp butter
  • Fresh cilantro (for garnish)
  • Baguette or crusty French bread
  • Optional sides: Pâté, pickled vegetables, or cucumber slices

Instructions:

  1. Marinate the Steak:
    • Combine soy sauce, oyster sauce, sesame oil, sugar, black pepper, and minced garlic in a bowl.
    • Add the beef steaks to the marinade, ensuring they’re well-coated. Let sit for at least 20 minutes (or overnight for more flavor).
  2. Prepare the Vegetables:
    • Heat a cast-iron skillet or nonstick pan over medium heat.
    • Melt 1/2 tbsp of butter and sauté the onion until fragrant and softened, about 2 minutes. Remove and set aside.
  3. Cook the Steak:
    • Increase the heat to high and add the marinated steak to the skillet. Cook for 2-3 minutes per side, depending on your preferred doneness. Remove and set aside.
  4. Fry the Eggs:
    • In the same skillet, melt the remaining butter. Crack the eggs into the pan and cook sunny-side-up until the whites are set but the yolks are still runny.
  5. Assemble and Serve:
    • Arrange the steak, fried eggs, sautéed onions, and tomato wedges on the skillet. Garnish with fresh cilantro.
    • Serve immediately with warm baguette, pâté, or your preferred sides.
